SPICY HONEY DRUMETTES

It's amazing how many successful restaurant chains across America serve only chicken drumettes. The chicken is usually marinated then fried or broiled and topped with sauces ranging from spicy to savory. In Cajun Country, we have elevated this simple ingredient to new heights in dishes such as jambalaya, gumbo and even this spicy baked method.

Ingredients:
3 pounds chicken drumettes
1 cup honey
2 tbsps Worcestershire sauce
2 tbsps soy sauce
1 tsp red pepper flakes
salt to taste

Method:
Preheat oven to 400°F. Rinse drumettes and pat dry. Arrange chicken in a single layer on a baking sheet. Bake 10 minutes. In a small bowl, blend together remaining ingredients. Spoon half of honey mixture over drumettes, then bake 10 additional minutes. Using tongs, turn each drumette over. Spoon remaining honey mixture over chicken, and continue to bake 10 minutes.
